A delicate, fresh and elegant Brut Cava, originally only used for the prestigious annual Music and Arts Festival held at the Perelada Castle in July and August.
The grapes are sorted manually in the vineyard, then each variety is fermented separately and blended after fermentation. Secondary fermentation occurs in bottle following the traditional method, no dosage takes place. The wine matures on its lees for 15 months (6 months longer than the legal requirement of 9 months).
Tasting Notes: Pale yellow in colour with a generous stream of fine bubbles. Thanks to its ageing, it has developed a fine aroma of brioche and almonds with fruity notes of red apples and citrus fruit. Dry, well balanced, elegant Cava with rich and complex finish.
Serving Suggestion: A great celebration wine, great on its own or with seafood dishes.
Grape Variety: 60% Xarel-lo, 25% Parellada, 15% Chardonnay
